SAFFRON CHICKEN NOODLE SOUP

When feeling under the weather, I prepare a generous pot of chicken noodle soup elevated with saffron. This is the ultimate comfort-healing food.


Saffron has powerful antioxidant and anti-inflammatory qualities. It has been used for its therapeutic properties throughout centuries. Chicken broth is rich in vitamins and minerals, helping to guard against flu and other ailments.

Together, they are delicious and the perfect duo for boosting our immunity!


METHOD

  • Fill a large stock pot with 10 cups of water and add half the celery, carrot, garlic, and ginger as aromatics.

  • Add the chicken to the pot

  • Bring to a boil and simmer for 45 minutes

  • Strain the broth and remove the wilted vegetables and chicken

  • Add your bloomed saffron

  • Shred your chicken and separate half for later use

  • Add your remaining chopped carrots and celery to the broth and cook until soft but firm, 20 minutes

  • Add your shredded chicken and egg noodles. Season to taste

  • Cook for another 10 minutes

  • Garnish with chopped parsley

INGREDIENTS

  • Small organic chicken

  • 4 stocks of celery, two onions, and 2 large carrots chopped

  • 4 cloves of garlic, 1 inch of ginger

  • Salt and pepper to taste

  • Turmeric

  • Fresh parsley

  • 1 cup of egg noodles

  • A generous pinch of saffron (about 15 strands) ground and bloomed in hot water for about 15 minutes
